So for This heavenly Earthy great noodle soup, I Parepared for the Chicken borth first.

Just regular chicken broth.

The Ingredients for the soup are :

Chicken broth 1 liter

Sichuan peppercorn 1/2 tbsp

Dried chili 15 gr

Crushed garlic 1 clove

Star anise 5 gr

Cinnamon 1/2 small stick

Dried lime 2 pcs

Coriander powder 1/4 tsp

Cardamom 3 pcs

Oil for sautée

Chili bean paste 3 tbsp

Sesame oil 1tsp

Seasoning (salt, pepper and sugar)

To make this spicy soup it’s easy, sautée the chili bean paste and add all dried item, just boil everything together at one time except for the sesame oil. Sumer it for about 25 min, and season with salt, pepper, and sugar and balance the taste of it. Add sesame oil at last.

The broth is ready, we’re going to prepare for the veggies and dumpling, I used bok choi, bean sprout, spring onion, oyster mushroom, button mushroom, enoki take, Chinese cabbage, coriander leaves and shiitake. For dumpling, shrimp ball, meatball , fish tofu, squid ball , crab stick, and you can also add sliced chicken or beef, uh also for the noodles we can use anything, I used rice noodles.

For the dumpling is boiled, and vegetables are blanched.

Put everything inside the bowl, add the soup( boil it first) add coriander leaves on top to enhance the flavor.
